Cheddar Cheeseburger Meatloaf

Ingredients: 80% ground meat or turkey, cheddar cheese, pepper jack cheese celery seeds, dry rosemary, cayenne pepper, garlic powder, onion powder, dry oregano, paprika, ground mustard, Black pepper, sea salt, Italian bread crumbs, garlic cloves, red onion, green pepper, yellow pepper, lemon pepper, parsley, scallions, worchestershire sauce, 1 can of evaporated milk, grey poupon dijon mustard, ketchup, sugar, two beaten eggs,"I can't Believe Its not Butter" Pepper Mushrooms...*you will need wax paper*
Veggie Side: I encourage readers to use veggie option of choice for saute I used yellow & green peppers, red onions; and mushrooms.
Side: Baked macaroni & cheese, again use side of choice.

1. Chop then saute yellow green peppers, red onion, garlic cloves, scallions, in "I can't believe its not butter or olive oil.*chop parsley set aside*
2. Season meat with sea salt, pepper,garlic powder, onion powder, celery seeds, dried rosemary,cayenne pepper,paprika,ground mustard, worchestershire sauce. *work ingredients into meat with hands*
3. In a bowl beat two eggs, add saute ingredients, add chopped parsley, add  1/2 cup ketchup diluted with water add sugar or honey to cut acidity *mix* Add grey  poupon dijon mustard, worchestershire sauce*mix* add bread crumbs *mix*
4. Add wet ingredients to meat. *mix ingredients into meat well with hands*
5.Flatten and spread the meat out on wax paper
6.Add cheddar Cheese or cheese of preference ,sprinkle evenly over meat
7. Begin to Roll meat using wax paper,rolling the meat causes the cheese to melt in a marbleized pattern when cooking, which can been seen once meatloaf is sliced. place rolled meat in greased baking dish; seal edges and smooth with hands,
8. Put a half of cup of ketchup in a cup add water sugar or honey to cut acidity pour ketchup mixture on top of meatloaf coating it.
9.Place meatloaf in oven Bake at 350 temp for an 1~Hour &10 min.Remove form oven let sit for 5~10 Min before cutting

*Saute veggies in non stick pan:* season with sea salt, lemon pepper, garlic powder,onion powder, ground mustard, dried oregano.

Baked Macaroni & Cheese:
1. Cook pasta according to directions, once cooked drain and set aside
2. On the stove top warm evaporated milk add cheddar & pepper jack cheeses occasionally stirring add salt and pepper.once cheese has melted turn off stove top
3. In a greased baking pan layer pasta,then cheddar cheese*Or cheese of choice various cheeses can be used at one time*pasta, then cheese repeat layering steps till all pasta and cheese have been used.Last layer should be a cheese topping.
4. pour warm
evaporated
milk and cheese mixture over layered pasta and cheese in baking pan put in oven at *350 Temp* 20~25min or till cheese has melted.

Yesterday, I met a healthy woman in her 50s that looked 30.  I asked her how she does it and all she did was laugh.  I said come on now, stop holding out...give me the answer then she laugh again.  I asked her well, are you going to tell me or what.  She said I did better than that, I showed you.  Ah Ha, like I tell people. all smiles...Laughing a lot is the secret.  She says, you're a smart one huh. Then, I start smiling. LOL

No matter what life throws at you, remember that it's not as valuable as your life.  Always smile and laugh because when it's all said and done, you are what really matters...

Homemade Banana Cereal

Fall is here! The temperature has cooled off, leaves are changing color and falling off branches. Growing up another sign of the weather transition was the aroma of Banana Cereal in my house.

Ingredients: Banana's Sweetened Condensed Milk, Ground Cinnamon, Ground Nutmeg, Pure Vanilla Extract

1. Peel three banana's, break in the middle put in blender add a little water
2. On stove top bring water to boil
3. Stir in blended banana into boiling water
4. Lower stove to medium flame,constantly stir for 5min
6. Add Sweet milk, Ground Cinnamon, Ground nutmeg, Vanilla extract
7. Lower stove to low flame,frequently stirring for 10 min

Salmon Cakes, Yellow Rice, Black Bean Huums, Zucchini... Pumpkin Bread

Ingredients: Two Cans of Red Salmon or pink *if your using fresh salmon cook first then follow steps* Two cans of black beans,Yellow rice, Zucchini, Green & Yellow Pepper's, Red onion, Garlic cloves, Fresh parsley, two eggs, lemon, Old bay, Italian bread crumbs Dijon mustard, Ground mustard, Ground cumin, Onion & garlic powder, Celery seeds Sea salt, Black pepper,Cayenne pepper, Paprika, Miracle whip, *or mayo* White wine vinegar,Worcestershire sauce, Sesame tahini, "I can't believe Its not Butter" *or oil*

1. Chop garlic cloves, Green & Yellow peppers, Red onion, saute in butter or olive oil
2. In a large bowl mix salmon with sea salt, black & Cayenne pepper, Garlic, Onion powder,Old Bay,Celery seeds, ground mustard,Dijon mustard,Worcestershire sauce,miracle whip*or mayo*, Beaten eggs,  or flour, Add sauteed peppers & onion*mix ingredients, Add fresh Parsley.Mix, Add Italian bread crumbs, Mix
3. Scoop portions of salmon mixture from the bowl make into patties place on buttered or oiled pan Bake at a 350 temperature 15min on each side or till brown

Cook Yellow rice or rice of choice according to directions on package:
Black bean Hummus:

1. Drain black beans reserve some of the liquid
2. Season beans with Onion,Garlic powder, ground cumin Cayenne pepper, Paprika,sea salt *cook on stove top till tender.
3.Saute and brown chopped garlic cloves add to cooked beans
4.Put beans in blender or food processor, Add lemon juice,*1 juiced one lemon* a little of the reserved bean liquid, 2~3 tablespoons of sesame tahini blend till smooth

Zucchini:
1.Saute garlic cloves & Red Onion  til brown
2.Add chopped zucchini  season lightly salt, onion garlic powder

3.Cook to desired tenderness

Dessert: Pumpkin Bread
 I used a pumpkin bread mix from Trader Joe's, it requires Eggs, Oil, and Water. It is absolutely delicious. I purchased two boxes to try it out, and ill be going back for more its a must have for the kitchen.

Tips when doing business with friends and family

In the Black community, it is common to hear other professionals recommend others not to mix business with pleasure or do business with family or friends.  I have to say that I have changed my views on this cancerous thought process.  Who better to handle business endeavors with than those that you can relate to and care about?

Tips when doing business with friends and family

1.  Stop thinking free and start thinking productivity.  Respect your friends business expertise and experience.  It is OK to request discounts for services you are requesting but be mindful to not offend your friend or family member by wanting professional services for free.

2.  Be fair, if you are able to barter products for services, make sure you have a concise idea of the cost for those services as they relate to the cost of bartering products.

3.  Never take a business decision or a rejection as a personal offense.  That decision could be what is best for both parties.

4.  Keep it in writing.  Business is business even when it's with friends and family.  Terms and Conditions help both parties to remain focus on the purpose of a business agreement.  I highly recommend that you draft a contract and keep it in write.

5.  Remain positive without doubt that your friendships and family relationship will only be enhance and will not suffer from integrating your personal life with a business one.  Thoughts become reality so remain positive.

6.  Respect each others personal time.  Handle your business request during appropriate business hours.  Everyone needs time to just relax.

7. Teach others and share with them your success in having personal and business relationship with friends/family.
